Can you see who unfollowed you on Instagram?
No. Instagram does not show who unfollowed you, and it has no unfollower list. You see your follower count and your current followers. That's it. Instagram Insights can show how many followers you gained or lost, but never who left.

How to check if one person unfollowed you on Instagram

Tracking starts after you connect. Unfollow stores your current follower list as the starting state. Later checks compare new follower lists with the stored state and record accounts that are no longer following you.
A tracker cannot look backward and find old unfollows that happened before you connected. It can only record changes after the first successful check creates that starting baseline.
